Готовим пышные и ароматные пончики в домашних условиях

Побалуйте себя пушистыми, вкусными и нежными пончиками, приготовленными из домашнего дрожжевого теста. Для посыпки я рекомендую взять обычную сахарную пудру, но вы можете проявить фантазию и использовать растопленный шоколад, глазурь, мак, мед и так далее.

Ингредиенты:

  • 520 грамм муки;
  • 260 мл молока;
  • 10 грамм сухих дрожжей;
  • 50 мл топленого масла;
  • 60 грамм сахара;
  • 1 ч. ложка соли;
  • 1 ч. ложка ванильной эссенции;
  • 2 яичных желтка;
  • 1 ч. ложка разрыхлителя;
  • 1 ст. ложка сахарной пудры для посыпки.

Принцип приготовления:

1. В миску налейте теплое молоко, добавьте сухие дрожжи и хорошо перемешайте. Затем добавьте желтки, сахар, разрыхлитель, соль, топленое масло, ванильную эссенцию и тщательно смешайте ингредиенты.

2. Добавьте в полученную смесь просеянную муку и вымешивайте массу сначала деревянной ложкой, а затем замесите тесто руками. Тесто должно быть мягким, но не прилипать к рукам.

Нужно замешивать не менее 10 минут, чтобы мука хорошо связывалась с остальными ингредиентами. В этом случае пончики будут иметь пышную и красивую форму.

3. Положите тесто в смазанную маслом миску, накройте полотенцем или пищевой пленкой и оставьте на 1 час, пока ком не удвоится в объеме.

4. Выньте тесто из миски на рабочую поверхность и разделите его на 24 равных части (по 35 г каждая). Каждому кусочку придайте круглую форму.

5. Разложите получившиеся шарики на противень, застеленный бумагой для выпечки и накройте полотенцем. Оставьте заготовку в покое на 20 минут.

6. Через 20 минут вставьте палец в середину каждого шарика, и сформируйте отверстие. Дайте пончикам постоять еще в течение 10 минут (не накрывайте полотенцем, поверхность должна слегка обветриться и не впитывать при жарке много жира).

7. Пока пончики «набухают», налейте масло в кастрюлю и нагрейте его до 170°C. Осторожно снимая пончики с бумаги для выпечки, выкладывайте их в горячее масло, стараясь, чтобы обветренная сторона была погружена в масло. 

8. Очень важно жарить пончики на медленном огне, по крайней мере, по 2 минуты с каждой стороны. Если жарка будет длиться меньше времени, пончики останутся сырыми в середине. Пышки следует переворачивать только один раз, когда первая сторона закончит обжариваться.

9. После обжарки переложите их на бумажные полотенца, чтобы впитались излишки жира. 

Посыпьте пончики сахарной пудрой и наслаждайтесь!
